Sauvignon Blanc - Carmenere

The vineyards for both Sauvignon Blanc and Carmenere are located on the banks of the Las Chilcas estuary of the San Rafael estate in the Maule Valley. These sites are the coolest on the estate and produce grapes with good acidity and great aromatic expression. The Carmenere grapes are harvested very early in the season, allowing them to better preserve their natural freshness and fruit expression.

Winemaking

The grapes of both varieties are immediately destemmed and pressed and, in the case of Carmenere, only the juice that comes out of the grapes without color is used to avoid browning and the extraction of tannins that affect the balance of the wine. After static decanting at 10°C, the musts are fermented at 11°C to 14°C (52°F to 86°F). Once alcoholic fermentation is complete, the two strains are blended and the wine is prepared for bottling.

Color

Bright greenish yellow

Taste

Tropical fruit and herbaceous notes. The Carmenere delivers persistence and an unusual structure for Sauvignon Blanc, as well as stone fruit notes.

Aroma

Green apple, pineapple, grapefruit, freshly cut grass and apricot.
