Syrah - Rosé
The Syrah vineyards, which are more than 20 years old, are located near the Las Chilcas estuary with a south-east exposure on the San Rafael estate. This location allows us to obtain fresh grapes, with a thiol character and lower alcohol content. The Carignan vineyards come from the Ciénaga de Name, Cauquenes, an emblematic area in Chile for the production of this variety.
Winemaking
Harvested early in March, the grapes are directly pressed in a reductive manner (protected from oxidation), selecting only the first pale pink juices. The must is decanted statically at low temperature and then fermented at 13°C to 15°C, preserving its freshness and fruitiness. After alcoholic fermentation, the wine is kept on fine lees to gain roundness, structure and aroma.
