Sauvignon Blanc - Carmenere

The vineyard is located on the banks of the Las Chilcas estuary of the San Rafael Estate in the Maule Valley. These sites are the coolest on the property and allow us to produce grapes with good acidity and great aromatic expression. The Carmenere grapes are harvested very early in the season, allowing them to better preserve their freshness.

Winemaking

The grapes from both vines are immediately destemmed and pressed. In the case of Carmenere, only the juice that comes out of the grapes without color is used, in order to avoid browning and extraction of tannins that affect the balance of the wine. Once statically decanted at 10 °C, the musts are fermented at 11 °C to 14 °C. Once alcoholic fermentation is complete, the two strains are blended and the wine is prepared for bottling.
